Recipe: Sweet Potato Stew

Made this recipe for the first time on Monday and I really enjoyed it.  It has good flavor and is nice and filling.

Sweet Potato Stew

Makes 4 servings
Preparation Time: 15 minutes

4 boneless, skinless chicken breasts cut into bite size pieces
2 medium sweet potatoes, peeled and cubed
2 medium carrots, peeled and cut into 1/2 inch slices
1 can (28 oz) of stewed tomatoes
1 tsp salt
1/2 tsp black pepper
1/4 tsp of ground cinnamon
1/4 tsp ground nutmeg
1 tsp paprika
1 cup nonfat, low sodium chicken broth
1/4 cup fresh basil chopped


Combine chicken, potatoes, carrots, tomatoes, salt, pepper, cinnamon, nutmeg, paprika, and broth in the crockpot
Cover and cook on low for 6-8 hrs or on high 3-4 hrs or until done.
Sprinkle with basil just before serving.
