Recipe: Baked Sole with Parmesan Crust

Every other Thursday in my house is fish night so we've been playing around with new fish recipes.  The original version of this recipe had a homemade salsa that I didn't enjoy very much and ended up replacing with sauteed mushrooms.

Recipe: Baked Sole with Parmesan Crust
Adapted from Cook It Simply
Serves: 4

4 fillets sole, skinless
1/2 cup breadcrumbs
2 tbsp fresh parmesan, grated
4 tbsp butter, melted
2 tbsp olive oil
1 cup mushrooms, chopped

Preheat the oven to 400°F. Place the fish  in an ovenproof dish. Mix the remaining ingredients except for the mushrooms together and divide between the four fish fillets. Season well. Bake for 25-30 minutes until golden.

Saute the mushrooms in a small amount of olive oil until tender and serve on top of the fish.
